Vegan “Chicken” Salad recipe

Ingredients (use vegan versions):

1 package firm or extra-firm tofu, pressed
2-3 stalks celery, washed and diced
handful of red seedless grapes, washed and diced or cut into halves
3/4 cup pecan halves
1/2 cup vegan mayo (or to taste)
onion salt (to taste)
paprika (to taste)
dash white pepper

Directions:

Cut or tear pressed tofu into small, bite-sized pieces.  Place into a bowl and add the crunchy ingredients.  Toss with the mayo and add the spices to taste.  Enjoy!  Its great in a pita or with vegan crackers.
