Vegan Meatloaf

Ingredients (use vegan versions):

1 pound burger-style crumbles, thawing unnecessary
1/2 cup quick cooking oatmeal
1 tablespoon soy sauce
2 teaspoons Ener-G Egg Replacer beaten with 2 tablespoons water
1/2 medium onion, finely diced
ketchup

Directions:

Mix all ingredients together and press firmly into a greased loaf pan. Cover top liberally with ketchup and bake at 375 degrees for 35-40 minutes. Makes great cold leftover sandwiches, too.

Serves: 6

Preparation time: 50 minutes
