Grape-Nuts Roast

Ingredients (use vegan versions):

1-1/2 cups Grape-Nuts Cereal
1-1/2 cups hot soymilk
2 tablespoon margarine
3/4 cup chopped nuts-walnuts or pecans
1/2 teaspoon salt
Ener-G Egg Replacer for 2 eggs
1/4 cup finely chopped onion
3/4 cup finely chopped celery

Directions:

Combine all ingredients, mix well.  Pour into a Pam-sprayed loaf pan.  Bake at 350 degrees for 45 minutes.

This loaf may be served with a gravy of your choice or with ketchup.  Wonderful!

Serves: 6

Preparation time: 1 hour
