Hot Peanuty Chicken Salad recipe

This is a recipe from ET – she’s a special lady in my husband’s life, since she babysat him a lot growing up.

¼ cup chopped onion
¾ cup mayonnaise
Salt & pepper to taste
¾ cup chopped peanuts
2 ½ cups chopped, cooked chicken
¼ cup chopped green pepper
1 can cream of chicken soup
1 cup grated cheese
1 ½ cup cooked rice
1 small can mushrooms

Mix all together and pour into a 2 ½ quart casserole.

Sprinkle ¼ cup chopped peanuts on top.

Bake 30 – 40 minutes at 400.
