This is an incredibly easy recipe my mom taught me. You can bake it in the oven or do it on the grill. Here’s the grilled version.
Ingredients:
- 1 bottle of Catalina dressing
- 1 can of cranberries
- 1 packet of dried onion soup mix
- 4-6 chicken breasts
What I did for the sauce:
- pour bottle of Catalina dressing into a medium bowl
- add can of cranberries
- add packet of dried onion soup mix
- stir
Chicken:
- In a separate ziplock baggie, pound out the chicken breasts you will eat. (This time I did just 3 small breasts)
- Pour 1 cup of the sauce into the baggie
- put it in the fridge for 20+ minutes (if I plan well, overnight is great, too)
- put 1/4 cup of sauce into a small dish for dipping during dinner
- reserve the rest of the sauce in a freezer-save container and save it for next time
Heat up the grill:
grill the chicken on each side (a few minutes each side, depending on the thickness of the chicken)
Serve with the dipping sauce and a side green salad with radishes.
