We purchased our pumpkins from the Lafayette Farmers Market this year, so they (and obviously their seeds) are organic.
So we were anxious to try a new pumpkin seed recipe. Browsing online recipes and choosing our favorite flavor combinations, this is what we came up with:
What we did:
Remove pumpkin pulp by rinsing off seeds and pulling it off with your fingers.
Spread out the pumpkin seeds on parchment paper and let them dry out overnight. (We initially used paper towels which is a BAD IDEA, since the seeds will stick to the paper towels as they dry).
The next day, preheat the oven to 250 degrees.
Mix these ingredients together in a microwave-safe bowl:
- 1/2 cup vegetable oil
- 1-2 T Worchestershire sauce
- 1 t organic Apple Cider vinegar
- garlic salt to taste
- onion salt to taste
Stir, then pour over pumpkin seeds.
Once the seeds are evenly coated, bake/roast in the oven for 60-70 minutes, stirring every 15 minutes.
