Meal Planning (Week of Halloween)

As I type this blog post, I keep thinking of Tom Hanks in Sleepless in Seattle picking up his phone to the tune of “Back in the Saddle Again” – only we’re getting back into meal planning and cooking.

I just browsed through the new Holiday Edition of Cooking Light and saw LOTS of great ideas for Thanksgiving (including a 550-calorie Thanksgiving meal… vs. the typical 3,000 calorie indulgence).

We won’t be making anything elaborate this week – it is the first week back in the saddle for us, after all! 🙂

  • roast
  • our spin on Cooking Light’s Maple-Glazed Chicken with Apple-Brussels Sprout Slaw (takes 20 minutes to cook!)
  • stuffed Turkey breast with Cheddar, Apples & Turkey Sausage
  • lentil/barley soup

you’re so good! it took us months to get back to cooking, and we don’t even do it consistently.

Wow you’re good. Like I’ve said before. It was many, many months after my kiddos before I was able to even think about cooking.
