Stuffed Turkey Breast with Cheddar, Apples & Sausage recipe

If you have a ton of leftover turkey, here is a recipe you might enjoy! ┬áThis is a Cooking Light recipe (slightly changed) that I wanted to try since I get really tired of chicken. Chris loves sausage recipes but I don’t eat pork, so the turkey sausage got us both excited!

yield: 6-8 servings

prep time: 20 minutes

bake time: 80 minutes (internal temp = 155)


  • 3 pounds turkey breast, boned
  • 1/4 cup Italian sweet turkey sausage, crumbled
  • 2 T unsalted butter
  • 1/4 cup onion, finely diced
  • 1/3 cup celery, fined diced
  • 1/2 cup Granny Smith apples, fined diced
  • 1/4 cup apple cider
  • 1/4 cup plain panko breadcrumbs
  • 4 oz aged Cheddar, fined diced
  • 1 T poultry seasoning
  • salt & pepper to taste


  • pre-heat oven to 375
  • remove skin from turkey breast in one piece and reserve
  • slice the turkey breast horizontally & open it to increase its surface to make stuffing easier
  • in a medium skillet over medium heat, brown crumbled sausage, set aside
  • in a medium skillet over medium heat, melt butter
  • add onions, celery & apples: cook for 4 minutes
  • add cider, panko breadcrumbs, cheddar, poultry seasoning & sausage
  • stir to combine
  • spread stuffing 1/2 inch thick over the turkey breast
  • roll breast (not too tight and wrap with the turkey skin)
  • secure with kitchen twine
  • roast in pre-heated oven for 80 minutes or until internal temperature reaches 155
  • let rest for 15 minutes, remove twine and slice
  • serve with turkey gravy
