Growing up I was a big fan of the boxed mac & cheese. I’ve had homemade mac and cheese a couple times, but it’s really NOT the best choice (hello carbs!). So I was thrilled to come across this much healthier (& tastier) version.
My sister and I had the opportunity to eat at one of Rocco DiSpirito’s restaurants in NYC – I’ve been a fan ever since. So I knew his book Now Eat This! would be a hit in our house.
Rocco takes all-American favorites and re-structures them into 350 calories or less per serving (delicious) recipes.

This recipe was easy to make, had a few surprise ingredients but is super flavorful and we will definitely make it again! His recipe has 6.5 grams of fat and 227 calories per serving.
