Juicing: beets, carrots, celery, garlic, parsley, apples

Chris and I caught Little Dude’s cold a few weeks back.  We were both trying to take care of the baby, work, feel-half-human and it just wasn’t happening…

I read that beets contain iron, calcium, sulfur, potassium, chlorine, beta carotene and vitamin C. They also stimulate lymph glands activity.  Since beets are very potent, it’s important to not drink it alone (too much beet juice can temporarily paralyze your vocal chords, cause hives, increase your heart rate and give you fever/chills) For example: the juice of 1/2 a beet should be mixed with the juice of four apples.

Celery is good for replenishing sodium – so if you work out regularly, this is a great veggie to juice. It also tastes salty/spicy (which I like).

Celery pairs great with garlic and garlic happens to be great at boosting the immune system.

Parsley calms an upset stomach and carrots and apples seemed like a good way to balance out the other veggies. 🙂

This juice was a little earthy because you juice the beet leaf, too… but I enjoyed it and felt better afterwards. 🙂
