Double Chocolate Chip Mint Cookies

Double Chocolate Chip Mint Cookies

cookie ingredients

Miniature York Peppermint patties  :: Freeze in advance, overnight works best.

 

1½ Cups Sugar

1 Cup Brown Sugar             }  Beat until fluffy

1½ Cups Butter – room temperature, soften (do not microwave it on HIGH, it will mess up the consistency)

1 t peppermint extract

1 t vanilla extract

3 Eggs                             }  Add one at a time & beat

4 Cups Flour

1 Cup Cocoa unsweetened      }  mix dry ingredients together

1 tsp. Baking Soda                       } and add slowly to above

½ tsp. Salt

1½ Cups Chocolate Chips  }  add and stir in

Form 1″ balls with the cookie dough

Flatten

Place miniature mint patty in the middle and form the dough around it, so that no part of the mint is sticking out.

Place on cookie sheet lined with Parchment paper.

 

Bake 8-11 minutes at 350, depending on size.

Cool.

Drizzle with mint flavored frosting.

 

Frosting:  (Optional)

1 Cup Powdered Sugar

2 Tbs. Milk                      }  Mix well & drizzle over cookies

½  tsp. Mint Extract

a few drops of green food coloring (optional)
