mid-week gluten-free meal plan

It’s a little weird meal planning in the middle of the week, but that’s how eMeals works (meal plan is released on Wednesdays) and Vitamin Cottage has their “red line” (marked down) specials on Wednesdays… So, it’s the new normal for us!  I stayed $10 under budget at the grocery store – and that included buying some multivitamins for Little Dude (something I normally don’t include in the grocery budget).  So I feel like I was VERY good this week. 😉

This week is another combo of eMeals, using up what we have on hand and trying “new” foods Little Dude picks out at Vitamin Cottage.  He ate some plum today! Something he has refused to eat so far – so we are making progress! 🙂

  1. grilled fish and cheesy zucchini egg bake
  2. grilled or smoked whole chicken (depending on hubby’s schedule)
  3. sweet potato with ground beef (inspired by this recipe)
  4. tuna & white bean salad
  5. spinach & cheese tortellini (gluten free) with pesto sauce
  6. chicken & grape salad sandwiches (from leftover whole chicken)
  7. grilled cheese
